Ingredients

  • 2 Sweet Potatoes
  • 50g Sugar (1.76 oz)
  • 20g Butter (0.71 oz)
  • 60ml Dairy Cream
  • 1 Egg Yolk
  • 1/2 tbsp Rum
  • A Few Drops of Vanilla Extract
  • 1 Egg Yolk for Gloss Finish
  • 1/2 tsp Water
  • Black Sesame Seeds

Instructions

Step 1

Wrap the sweet potatoes with a paper towel. Moist them with water. Wrap each potato tight with a plastic, and double-wrap it tight with another plastic. Put them in a plate. Heat the potato in a microwave for 5 minutes. Flip the the potatoes and cook for 5-6 minutes.

Step 2

Insert a bamboo stick into the potato to check doness. If it is done, cut the potato into half. Scoop the potato out of the skin. Be careful not to damage the skin. Weight the 300g/0.66LB sweet potato. Put in a sauce pan, add 50g Sugar. Use a masher to mash well. Add 20g Butter, mix well. Add 60ml Dairy Cream, mix well. Add 1 Egg Yolk, mix well.

Step 3

Add 1/2 tbsp Rum and a Few Drops of Vanilla Extract. Mix well.

Step 4

Put the sauce pan on low heat. Stir and cook until the whole mixture is easily taken off the pan bottom. Transfer the mixture in a plate. Stuff the mixture on the potato skin. press tight.

Step 5

use your hand and a plastic to shape the potato well. To make egg wash, add 1 egg yolk and 1/2 tsp Water in a bowl. Mix well. Brush the potato with the egg wash. Put some black Sesame Seeds on top.

Step 6

Put foils on a baking sheet. Put them in the oven and pre-heat to 500F. Open the oven, and place potato on each foil. Bake at 500F for 5 minutes.
