Recipe: Red Wine Braised Pork Ribs

Ingredients

  • 16 pork ribs
  • 1 carrot finely diced
  • 1 onion finely diced
  • 1 celery stalk finely diced
  • 3 cloves garlic, chopped
  • 2 bay leaves
  • 1/4 teaspoon ground thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili flakes
  • salt and pepper to taste
  • 3 tablespoons tomato paste
  • 1 tablespoon vinegar or lemon juice
  • 1 cup red wine
  • 2 cups stock (vegetable or meat)
  • 1 cup water

Instructions

Step 1

Salt and pepper the ribs and sear them well on both sides. Remove from pan.

Step 2

To the pan, add onion, carrot, celery, garlic and some salt and pepper and saute 4 minutes.

Step 3

Add all the spices and tomato paste and saute 2 minutes until carmelized.

Step 4

Add vinegar and mix. Add wine, stock, and water and mix. Add the either and slow cooker or a heavy bottomed pot. If using the slow cooker, cook on low for around 4 1/2 hours. If using a pot and stove, cook on low for around 2 1/2 hours. You want to meat to easily flake off the bone but still be in tact. All cooking equipment varies so trust your own judgment on timing.
- If you desire, reduce the sauce a bit further or strain the vegetables from the sauce for a more restaurant style.

Step 5

Serve over polenta, rice, potatoes. Or remove the pork from the bone and serve it with the wine sauce over pasta with some grated cheese. Yummy!
