Ingredients
- ½ punnet cherry tomatoes, halved
- 300g rocket
- 10 small bocconcini balls, halved
- 1 red onion, thinly sliced
- 40g (1/2 tube) Gourmet Garden Fresh Blends Mediterranean
- 3 tbsp olive oil
- ¼ cup toasted pine nuts
Instructions
Step 1
In a small bowl or jug, whisk together Gourmet Garden Fresh Blends Mediterranean and olive oil.
Step 2
In a large salad bowl, combine rocket, cherry tomatoes, bocconcini and red onion.
Step 3
Pour dressing over salad and toss to combine. Serve topped with pine nuts.
