Ingredients
- 1 (8-ounce) box Chicken Breader
- 1 pound white fish, cut into bite sized pieces
- 1 (10-ounce) bag romaine lettuce
- 4 small cucumbers, peeled and sliced into rounds
- 1/2 red onion, thinly sliced
- 2 large Roma tomatoes, cut into cubes
- 4 ounces feta cheese crumbles
- 1/2 cup Greek vinaigrette salad dressing
Instructions
Step 1
Preheat oil to 375°F. Place House-Autry Chicken Breader and fish nuggets into a resealable plastic bag; seal shut and shake to coat. Remove fish from bag and place in skillet. Discard remaining breader. Cook fish for 2 to 3 minutes, or until fish is cooked throughout.
Step 2
To serve: In a large bowl, drizzle half the dressing on lettuce; toss to lightly coat. Arrange cucumbers, tomatoes and onions on top; drizzle with remaining dressing. Top with flounder strips and cheese. Serve immediately.
