You can devein after removing the shell using a devein tool. Growing up in coastal NC my family has always purchased or caught fresh shrimp cooked within a 48 hours of being removed from the ocean or estuaries. I'm sure there is a fancier method of doing this but what you see is how people do it down south every day. If you over cook your shrimp or your shrimp have been left in the air to long causing them to dry, the shrimp will stick to the shell and this method will not work.
