Ingredients
- 2 large garlic cloves
- 2 tbs coarse salt
- 1 tsp thyme
- 2 tbs olive oil
- 2 tbs dijon mustard
- black pepper
- 5 lb prime rib roast
Instructions
Step 1
Add 2 large garlic cloves and 2 tbs coarse salt in a bowl. Mash well. Add 1 tsp thyme, 2 tbs olive oil, 2 tbs dijon mustard, and some black pepper. Mix well.
Step 2
Let prime rib roast sit at room temperature for at least 1 hour. Rub the sauce on the prime rib.
Step 3
Heat oven to 450 degrees. Cook meat for 15 minutes. Reduce heat to 375 degrees. Cook about 1 to 1 1/2 hours. Medium rare = 130 degrees.
