Recipe: Pumpkin Cupcakes with Cinnamon Frosting
Ingredients
- 1 cup canned pumpkin
- 1/3 cup oil
- 1 cup granulated sugar
- 1/4 cup soy milk
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- Frosting:
- 1/2 cup confectioners sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons margarine; melted
- 1 table spoon soy milk
- 1/2 teaspoon vanilla extract
Instructions
Step 1
Add 1/4 teaspoon salt,1/2 teaspoon ground cinnamon,
1/2 teaspoon baking powder,
1/2 teaspoon baking soda,
and 1 cup granulated sugar in a big mix bowl. Whisk well. Make a well in the center.
Step 2
Add 1 cup canned pumpkin, 1 table spoon soy milk, 1/2 teaspoon vanilla extract, and 1/3 cup oil in the center. Mix the wet ingredients well. Add 1/2 cup chocolate chips in the center. Use the folding method to mix well.
Step 3
Spray some oil on your Cupcakes baking cup. Fill the mixture into the baking cups at 3/4 full.
