Ingredients

  • 1 tbsp olive oil
  • 1/2 tbsp butter
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeno or other small hot chili pepper, sliced
  • 1/2 red bell pepper, diced
  • 1/2 cup diced tomatoes
  • 4 oz green beans, cut in 1/2-inch pieces
  • 1 1/2 cup fresh or frozen corn
  • 1 cup frozen baby lima beans, thawed
  • 2 green zucchini, cubed
  • 1/2 tsp ground cumin
  • 1 pinch of cayenne
  • 1 salt and freshly ground black pepper to taste

Instructions

  1. Add 1 tablespoon olive oil 1/2 tablespoons butter in a saute pan over medium heat. When the oil is hot, add 1/2 diced yellow onion. Add a pinch of salt. Saute for 6-7 minutes or until light browned.

  2. Add 3 cloves minced garlic, 1/2 diced yellow onion, 1 sliced jalapeno and 1/2 diced yellow onion. Stir and saute for 3 minutes.

  3. Add 1/2 cup diced tomatoes in the pan, give it a stir. Add 1/2 tsp ground cumin, a pinch of cayenne and some black pepper. Give it a stir. Add 4 oz green beans pieces, 2 green zucchini cubes. Give it a stir. Add a pinch of salt and 1/4 cup water. Stir well. Keep it in medium heat, cook until the zucchini cubes are almost tendered, stir once a while.

  4. Dump in 1 cup frozen baby lima beans and 1 1/2 cups fresh or frozen corn. Give it a mix. Cook until lima the beans and corns are cooked through. Add some salt to adjust the taste.
