Ingredients

  • 3 small summer squash
  • 6 tbsp goat cheese
  • 3 tbsp romesco sauce
  • 3 tbsp olive oil
  • 2 tbsp plain bread crumbs
  • 1 salt and pepper to taste

Instructions

  1. Cut off the top and bottom of the summer squash. Slice it into half.

  2. Use a spoon to take off the center of the summer squash.

  3. Preheat oven to 450F. Add some olive oil into a pan, then Place the summer squashes in the pan. Seasoned the summer squashes with salt and pepper.

  4. Crumble 1-1.5 tbsp goat cheese and add them in the center of the squash. Add 1/2 -1 tbsp romesco sauce, bread crumbs and then a tbsp olive oil in the center of the squash. Fill the remaining squashes.

  5. Bake for 15 - 20 minutes. After done, transfer them a serving plate. Keep the oil for other use.
