- 3 small summer squash
- 6 tbsp goat cheese
- 3 tbsp romesco sauce
- 3 tbsp olive oil
- 2 tbsp plain bread crumbs
- 1 salt and pepper to taste
Cut off the top and bottom of the summer squash. Slice it into half.
Use a spoon to take off the center of the summer squash.
Preheat oven to 450F. Add some olive oil into a pan, then Place the summer squashes in the pan. Seasoned the summer squashes with salt and pepper.
Crumble 1-1.5 tbsp goat cheese and add them in the center of the squash. Add 1/2 -1 tbsp romesco sauce, bread crumbs and then a tbsp olive oil in the center of the squash. Fill the remaining squashes.
Bake for 15 - 20 minutes. After done, transfer them a serving plate. Keep the oil for other use.
