This Seared Fruit Scallops is very delicious and spicy, with pleasant bitter-sweet heat of the fruit.

Ingredients

  • 2 small jalapeno, brunoise cut
  • 1 sweet orange - sectioned
  • 1/4 cup rice vinegar
  • 2 tbsp olive oil
  • 1/2 tsp sambal - Asian red chili condiment - optional
  • 1 tbsp vegetable oil
  • 4 day boat scallops
  • 1 salt to taste

Instructions

  1. take a sharp knife, make 4-5 slices of the jalapeno, just around the outside. do not want any seeds.

  2. then take this strips, and dice them into small dices

  3. put them into a bowl, add 1/4 cup rice vinegar, some salt, 1/2 tsp sambal (Asian red chili condiment), mix.

  4. now cut both ends of an orange, use round motion technique to take off the peel, cut the orange into small strips, then add them to the bowl, mix well. This is the sauce

  5. add oil in pan, and heat the pan. when hot, add scallops, turn the heat down to medium, cook for 3 minutes or until brown. flip scallops over, cook for another 3 minutes, remove

  6. spoon some sauce into a serving plate, then place cooked scallops on top, enjoy.
