- 4 large yellow onions - cut in large dice
- 1/2 stick unsalted butter
- 1 tsp kosher salt
- 2 sprigs fresh thyme
- 1 Bay Leaf
- 1 fresh ground black pepper to taste
- 1 tbsp sherry vinegar
- 1/4 cup dry sherry wine
- 3 cup high-quality beef broth
- 2 cup high-quality chicken broth
- 1 cup water
- 1 toast
- 1 shredded Gruyere cheese
Cut each large yellow onion into half, then cut in large dices.
put them and 1/2 stick unsalted butter into a pan.
Then add in 1 tsp kosher salt to make the water come out. Cook slowly over low heat for 40-45 minutes or until soft and golden.
Then add in 2 sprigs fresh thyme, 1 bay leaf, 1 tbsp sherry vinegar, 1/4 cup dry sherry wine, 3 cups high-quality beef broth, 2 cups high-quality chicken broth, 1 cup water. Simmer slowly for 1 hour.
Spoon some soup into a bowl, lay on a toast bread, some shredded Gruyere cheese. Put the bowl into a oven, cook until golden, bubble.
