Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 3 tbsp vegetable oil
- 1 pinch of salt
- 1 tbsp sugar
- 1/4 cup + 1-2 tbsp cold water
- 1 cup milk
- 1/2 cup real fruit preserves
- 4 oz cream cheese
- 1 1/2 cup ricotta cheese
- 1 egg
- 3 tbsp powdered sugar
- 1 tbsp lemon zest
- 1 butter for pan
Instructions
Put 1 cup all-purpose flour, 2 beaten eggs, 3 tbsp vegetable oil, pinch of salt, 1 tbsp sugar, 1/4 cup + 1-2 tbsp cold water into a pot. Mix well.
Add in 1 cup milk. Continue to stir well. Throw that in the fridge for 1 hour and then we\'re getting our blintz on.
Melt 1/2 cup favorite fruit preserve with water, it becomes blueberry. Bring that to a simmer on low heat. That\'s going to go down on the plate underneath the blintzes.
Put 4 ounces cream cheese, 1 1/2 cups ricotta cheese, 1 egg, 3 tablespoons powdered sugar, and 1 tbsp lemon zest into a large bowl. Mix well.
Add some butter to a Non-stick pan on medium heat. Dump the batter right in the center of the pan. Cook for 1.5 minutes, flip it over. When done, transfer to a plate.
Spoon the filling in the centre of the Blintze. Then just like rolling up a package, fold it over, and roll it up into a blintz-like shape. Transfer into a baking dish with the seam-side down. Do the rest of those.
Add Couple table spoons of butter into a pot over heat. When the butter foams, put the blintzes in. brown on both sides. after done, transfer back over to our casserole dish. Cook in a 400 degree oven for about 10 minutes.
The blintzes are done. the egg is cooked, they firmed up. Place hot blintz, give it a little powdered sugar.
