Ingredients
- 2 pork tenderloins
- 1 salt as needed
- 2 tsp vegetable oil
- 1 For the rub:
- 2 tbsp unsweetened dark cocoa powder
- 1 tbsp Ancho chili powder
- 1 tsp ground cumin
- 1 tsp freshly ground black pepper
- 1/2 tsp ground chipotle
- 1 for the sauce:
- 1/3 cup cherry preserves
- 1/3 cup white vinegar
- 1 big pinch of oregano
Instructions
To make the rub, combine 2 tablespoons unsweetened dark cocoa powder, 1 tablespoon ancho chili powder, 1 teaspoon ground cumin, 1 teaspoon freshly ground black pepper, and 1/2 teaspoon ground chipotle in a bowl.
Salt the tenderloins, then coat them with the rub.
Put 2 teaspoons vegetable oil in a skillet over medium high heat. When the oil is hot, turn the heat to medium. Sear the tenderloins 1 minute per side. Remove and put is in a baking dish.
Cook the tenderloins at 375F for 20-25 minutes in an oven.
Add 1/3 cup cherry preserves, 1/3 cup white vinegar and a big pinch of oregano in a pot over medium heat. Whisk well. Bring it to a boil. Cook for 30 seconds, then turn off the heat. Adjust the taste with salt and pepper.
After the the tenderloins are done, slice it in 45 degree angle. Spoon over the sauce.
