Japanese Yakitori is tasty with cold beer, and it is simple and easy to make.<br />

Ingredients

  • 300 g Chicken thighs - boned and skinless
  • 5 small Baby leeks
  • 1 large red pepper
  • 1 ½ tbsp Dried red chilli powder
  • 100 ml soy sauce
  • 50 ml sake
  • 50 ml mirin
  • 2 tbsp sugar
  • 50 ml thick teriyaki sauce

Instructions

  1. Mix 100ml soy sauce, 50ml sake, 50ml mirin and 2 teaspoons of sugar in a bowl. Mix the chicken into the marinade and refrigerate for at least 5 hours until the flavor to be absorbed.

  2. Place alum foil onto the bottom of the grill tray. Chop the leeks and pepper in to 2.5cm square pieces. Thread the chicken on to the skewer then add leek, a piece of chicken, red pepper, then add a final piece of chicken to cover the top of the skewer. Leave some space at the bottom of the skewer as a handle. Put the skewer onto the grill tray. Repeat until you use all ingredients. Hint: in order to stop the exposed end of the skewer burning, fold the aluminum foil over it.

  3. Heat the grill hot, slide the tray with the chicken in to cook. The chicken should be cooked quickly, or the chicken would dry out. Check them constantly, and turn them over after one side is done. It takes about 10 to 15 minutes to cook, and when they are ready should look very slightly burned.

  4. Place the yakitori on a plate, brush them generously with the teriyaki sauce.

  5. To serve, it goes well with cold beer.
