This Irish Bacon and Cabbage is considered a delicacy in Ireland. It is delicious, soft and tender, great for St. Patrick Day. In Ireland, some people don't really eat corned beef and cabbage, so they make bacon and cabbage. This is the recipe right for them.

Ingredients
- 3 cloves of garlic
- 1 Swanson's chicken broth
- 1 big piece of pork
- 3 red potatoes
- 1 cabbage
- 1 salt and pepper
Instructions
In a big pot, throw in 3 cloves of garlic and Swanson's chicken broth. To flavor the water and give it that smoky, roasted flavor cut chunks off your nice big piece of pork and add them to the pot.
Then put the rest of that chunk of pork right into the pot with everything else. Now let your broth simmer. Don't put it to a hard boil though because it will make the pork break up causing your broth to discolor and have hard and gritty pieces in it. Allow it to simmer as long as you want. Add a few red potatoes (3). Cut your cabbage in half and then cut each half in turn. You want to cut the pieces into a size you can actually put a fork into and eat.
Once your cabbage is cut, put it into the pot. Add some black pepper. to keep it totally authentic black pepper is the only spice you will use. Cook about 30-40 minutes watching the potatoes. As soon as you can easily push a fork through them, it is ready. Serve in a bowl and be sure there's a bit of meat, cabbage and potato. A wonderful way to celebrate St. Patrick's Day with an Irish dish.
