This is a crispy, crunchy and extremely refresh dish. It is a great perfect raw salad which blends wonderfully with the Fuji apple and green cabbage.

Ingredients
- 1/2 small green cabbage
- 1/2 jicama
- 1 large Fuji apple
- 1 For the dressing:
- 1/4 cup pineapple juice
- 1/2 cup mayonnaise
- 1 tsp sugar
- 1 hot sauce to taste
- 1 salt to taste
- 1/3 cup crushed corn nuts
Instructions
Combine 1/4 cup pineapple juice, 1/2 cup mayonnaise, 1 tsp sugar, some hot sauce and salt in a bowl.
Remove the core of the cabbage, slice into 1/4-inch strips. Cut the jicama into half, use a sharp knife to shave off the peel. Slice into 1/4-inch strips on a vegetable slicer. Take 1 large Fuji apple, slice into 1/4-inch strips on a vegetable slicer. Put all the strips in a big bowl, toss well. Pour in the sauce, toss until combined. Let sit for 5 minutes. Then toss again.
Transfer to a serving plate, garnished with 1/3 cup crushed corn nuts.
