This Roasted Pork Tenderloin Recipe is the first meat dish I remember learning in culinary school because it is so delicious.

Ingredients
- 1 pork tenderloin, trimmed
- 1 salt and fresh ground black pepper to taste
- 1/2 cup chicken broth
- 1 tbsp extra hot horseradish
- 1 tbsp Dijon mustard
- 1/4 tsp cayenne pepper
- 2 tbsp cream
- 1 tsp fresh chives
- 1 tbsp cold butter
Instructions
Generously Season the the pork tenderloin with salt and pepper.
Add some olive oil in a pan over high heat. Put the pork tenderloin in the pan. Sear both side well.
Cook the pork tenderloin in an oven at 375F for 20-25 minutes. The internal temperature is 140-145F.
Add 1/2 cup chicken broth in the pan on high heat. Bring it to a boil. Add 1 tablespoon extra hot horseradish, 1 tablespoon Dijon mustard, 1/4 teaspoon cayenne pepper, and 2 tablespoons cream. Whisk well. Reduce to thicken. Turn off the heat. Whisk 1 tablespoon cold butter into the hot sauce. Add 1 teaspoon fresh chives.
Cut the pork tenderloin into big slices. Transfer to a serving plate. Spoon over the sauce.
