Ingredients

  • 16 pork ribs
  • 1 carrot finely diced
  • 1 onion finely diced
  • 1 celery stalk finely diced
  • 3 cloves garlic, chopped
  • 2 bay leaves
  • 1/4 tsp ground thyme
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp chili flakes
  • 1 salt and pepper to taste
  • 3 tbsp tomato paste
  • 1 tbsp vinegar or lemon juice
  • 1 cup red wine
  • 2 cup stock (vegetable or meat)
  • 1 cup water

Instructions

  1. Salt and pepper the ribs and sear them well on both sides. Remove from pan.

  2. To the pan, add onion, carrot, celery, garlic and some salt and pepper and saute 4 minutes.

  3. Add all the spices and tomato paste and saute 2 minutes until carmelized.

  4. Add vinegar and mix. Add wine, stock, and water and mix. Add the either and slow cooker or a heavy bottomed pot. If using the slow cooker, cook on low for around 4 1/2 hours. If using a pot and stove, cook on low for around 2 1/2 hours. You want to meat to easily flake off the bone but still be in tact. All cooking equipment varies so trust your own judgment on timing. - If you desire, reduce the sauce a bit further or strain the vegetables from the sauce for a more restaurant style.

  5. Serve over polenta, rice, potatoes. Or remove the pork from the bone and serve it with the wine sauce over pasta with some grated cheese. Yummy!
