This dish is made with mashed potato, half a roasted red pepper, and a pound of left over scallops , but it is great.

Ingredients

  • 3/4 cup cold mashed potatoes
  • 1 egg
  • 2 tbsp bread crumbs
  • 1 salt and fresh ground black pepper to taste
  • 1 olive oil
  • 1 lbs scallops
  • 1 cayenne pepper to taste
  • 1 tbsp butter
  • 1 tbsp capers
  • 1/2 roasted and peeled red bell pepper
  • 1 whole fresh basil leaves

Instructions

  1. Add 3/4 cup cold mashed potatoes, 1 egg, 2 tbsp bread crumbs, some salt and pepper in a bowl. Mix well.

  2. Add a little oil in a pan over medium heat. Put the mixture in the pan, make 4 round shapes. Cook 7-8 minutes per side. Remove and set aside. These are the potato pancakes.

  3. Put 1 pound scallops in a bowl, drizzle some salt, pepper and cayenne. Add a little bit olive oil. Stir well.

  4. Pre-heat the pan on high heat. When the pan is hot, put the scallops in the pan. Add the red bell pepper besides them. Cook the scallops for 3-4 minutes per side. Remove the scallops. Spread the red bell pepper in the pan. Add the whole fresh basil leaves, 1 tbsp butter and 1 tbsp capers in the pan. Stir and cook until the butter is resolved. Then add 1/4 cup water, turn off the heat.

  5. To serve, put a potato pancake on a serving plate, add 3 scallops on the pancake. Top the scallops with some red bell pepper and basil leaves. Spoon over the sauce. Enjoy!
