Ingredients

  • 1 cornmeal
  • 1 large thin pizza
  • 1 large onion
  • 2 tbsp olive oil
  • 1 salt to taste
  • 1 black pepper
  • 1/2 cup raw pumpkin seeds - or as much as you like
  • 4 oz Greek feta
  • 1/3 cup Parmesan
  • 1 tbsp chopped rosemary

Instructions

  1. Take 1 large onion, slice it up. Add some olive oil into a pan over medium heat. When the oil is hot, put the onion slices in. Saute for 10 minutes. Half way through, Add a big pinch of salt and 1 tbsp chopped rosemary. Stir for a few minutes. When the onion becomes soft and tender, turn off the heat, and let cool.

  2. Put some cornmeal on a sheet pan, spread them evenly. Then place a prepared pizza dough on the sheet pan, stretch it thin. Add the onion mixture into on the dough, spread evenly. Evenly distribute some black pepper, 1/2 cup raw pumpkin seeds, 4 oz Greek feta, and 1/3 cup Parmesan on the dough.

  3. Preheat the oven to 425F. Put the sheet pan into the oven. Cook 5 min on oven bottom. Then turn the sheet pan for even browning. Cook until the Parmesan is melted and the bottom of the dough becomes crispy. Move the sheet pan to the middle of the oven, cook for 10-15 minutes totally.

  4. After done, transfer the Flat bread to a cooling rack. Cool before serve.
