This recipe introduces a technique which is less sticky and much easier to work with, and the pizza comes out to be delicious, crispy, flavourful and tender.

- 2 oz whole wheat flour
- 16 oz all-purpose flour
- 1/4 tsp dry active yeast
- 1 1/4 tsp salt
- 1/4 tsp sugar
- 2 tbsp olive oil
- 1 1/2 cup warm water
- 1 cornmeal as needed
Add 2 oz whole wheat flour, 16 oz all-purpose flour (about 4 cups total), 1/4 tsp dry active yeast, 1 1/4 tsp salt, 1/4 tsp sugar, 2 tbsps olive oil, and 1 1/2 cups warm water in a big bowl. Stir well, it takes about 4 minutes.
Cover the bowl with a plastic, let rise for about 18 hours.
Flour your work place very well. Scrape the dough down on the work place. Add flour on the top of the dough. Flour your hand.
flat the dough, cut it into four even pieces. Form it into a ball. Put a little flour on it. Use rotate-stretch-tuck method make the dough piece. Go around for 5-6 minutes. Put them in plastic bags, refrigerate over night.
Take the dough out, add some flour on it. Use a wood roller to roll it.
Put some cornmeal on a sheet pan. Put the dough on the sheet pan. Spread some ketchup on it, just enough to cover. Add some hot pepper flakes, cheese and any your favourite toppings.
Bake it at 550F for 4 minutes on the bottom of an oven. The transfer on the center rack for 6 minutes. Remove, cool on a rack.
