Easy and fast way to cook chicken on top of that it is delicious! Perfect for appetizer or light meal.

Ingredients

  • 1 chicken breast
  • 1 a cup of flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp cayenne
  • 2 eggs
  • 1 tbsp milk
  • 1 lbs chicken scallopini (very thin chicken breast)
  • 2 tbsp olive oil
  • 1 and 4 tablespoons butter
  • 2 lemons
  • 1/2 cup sherry or white wine
  • 1/2 cup vegetable stock
  • 1 some finely-chopped parsley
  • 1 salt and pepper

Instructions

  1. Mix flour, salt, black pepper and cayenne together

  2. Whisk up two eggs and milk

  3. Take chicken scallopini (or chicken pounded thinly) dredge in Step 1. make sure chicken is coat with flour both sides

  4. Dump chicken into Step 2.

  5. Cook chicken in medium heated pan with olive oil and 1 tbsp butter for a couple of minutes per side

  6. Making sauce: squeeze lemon into pan together with sherry and vegetable stock. boil it down to half then add 4 tbsp butter and parcely

  7. add salt and pepper if necessary. put chicken back to pan and put sauce on chicken.
