Recipe: Yogurt Lamb Steaks

Ingredients

  • 4 lamb steaks
  • 2 tbsp plain yogurt
  • 1 tbsp olive oil
  • 4 cloves chopped garlic
  • 1 tsp ground cumin
  • 1 tsp fresh ground black pepper
  • 1 bunch fresh tarragon - torn
  • 1/2 bunch fresh mint - torn
  • salt as needed
  • For the vinaigrette
  • 2 tbsp honey
  • 3 tbsp sherry vinegar
  • 1/4 cup olive oil
  • 2 tbsp fresh mint - chopped
  • salt and fresh ground black pepper to taste

Instructions

Step 1

Get 4 lamb steaks, cut from the leg, about 1 1/2 inch thick

Step 2

Put 4 lamb steaks in a large bowl,
Then add 2 tbsp plain yogurt,
1 tbsp olive oil,
4 cloves chopped garlic,
1 tsp fresh ground black pepper,
1 bunch fresh tarragon - torn, and
1/2 bunch fresh mint - torn.
Whisk around, Let the lamb steaks coated with the mixture.
Then transfer to a plastic bag, and marinate for 8 hours.

Step 3

For the dressing, Add 2 tbsp honey,
some salt and fresh ground black pepper,
3 tbsp sherry vinegar,
1/4 cup olive oil in a mixing bowl. Whisk well.
When mixed, add in 2 tbsp fresh chopped mint. Whisk around. Set aside.

Step 4

After the lamb steaks have been marinated, Place them into a plate.
Season with some olive oil, black pepper, very generous salt on both sides.
Cook them in a very hot grill. Grill 6 minutes per side.

Step 5

After done, transfer the lamb steaks to a plate.
Spoon half of the sauce over. Let rest 10 minutes.
