Recipe: White Bean and Tomato Salad
Ingredients
- 1/3 cup olive oil
- 1/4 white wine vinegar
- 4 cloves minced garlic
- 1 anchovy fillet, mashed
- 1/2 teaspoon Dijon mustard
- pinch of red pepper flakes
- salt and fresh ground black pepper to taste
- juice of one lemon
- 2 teaspoons chopped fresh oregano
- 2 tablespoons chopped Italian parsley
- 1/2 teaspoon freshly grated lemon zest
- 1 pint basket cherry tomatoes, halved
- 2 (15-oz) cans white beans, rinsed, well drained
Instructions
Step 1
Add all the ingredients to a mixing bowl, and whisk vigorously to emulsify. Add the beans, tomatoes, and herbs.
