Recipe: White Bean and Tomato Salad

Ingredients

  • 1/3 cup olive oil
  • 1/4 white wine vinegar
  • 4 cloves minced garlic
  • 1 anchovy fillet, mashed
  • 1/2 teaspoon Dijon mustard
  • pinch of red pepper flakes
  • salt and fresh ground black pepper to taste
  • juice of one lemon
  • 2 teaspoons chopped fresh oregano
  • 2 tablespoons chopped Italian parsley
  • 1/2 teaspoon freshly grated lemon zest
  • 1 pint basket cherry tomatoes, halved
  • 2 (15-oz) cans white beans, rinsed, well drained

Instructions

Step 1

Add all the ingredients to a mixing bowl, and whisk vigorously to emulsify. Add the beans, tomatoes, and herbs.

Step 2

Mix well, cover and refrigerate for at least 1 hour before serving. Toss well before serving.
