Recipe: Watermelon and Cheese Salad

Ingredients

  • 1 small ripe watermelon
  • 4 oz feta cheese
  • 1/2 cup toasted cashews
  • 1/4 cup rice vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste
  • *optional garnish: some fresh mint or basil

Instructions

Step 1

Use a scooper to scoop watermelon into smalls, and put them in a bowl.

Step 2

Separate the lettuce leaves. Place them on a serving plate. Put the watermelon balls on the leaves. Topped with 4 oz feta cheese and 1/2 cup toasted cashews.

Step 3

To make the sauce, add 1/4 cup rice vinegar,
1/4 cup olive oil,
and some salt and pepper in a bowl. Mix well.
