Recipe: Watermelon Feta Salad
Ingredients
- 1 small ripe watermelon
- 4 oz feta cheese
- 1/2 cup toasted cashews
- 1/4 cup rice vinegar
- 1/4 cup olive oil
- salt and pepper to taste
- optional garnish - some fresh mint or basil
Instructions
Step 1
Cut the watermelon into half.Use a spoon to screw a watermelon ball out of the ripe watermelon.
Step 2
Take a Lettuce, cut off the end and take the leaves off the core. Place the leaves on a serving plate,then place the watermelon balls over the leaves. Topped with 4 oz feta cheese.
Step 3
Mix 1/4 cup rice vinegar, 1/4 cup olive oil into a small bowl, and pour over the Salad.Topped with some salt and pepper.
