Recipe: Watermelon Feta Salad

Ingredients

  • 1 small ripe watermelon
  • 4 oz feta cheese
  • 1/2 cup toasted cashews
  • 1/4 cup rice vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste
  • optional garnish - some fresh mint or basil

Instructions

Step 1

Cut the watermelon into half.
Use a spoon to screw a watermelon ball out of the ripe watermelon.

Step 2

Take a Lettuce, cut off the end and take the leaves off the core. Place the leaves on a serving plate,
then place the watermelon balls over the leaves. Topped with 4 oz feta cheese.

Step 3

Mix 1/4 cup rice vinegar, 1/4 cup olive oil into a small bowl, and pour over the Salad.
Topped with some salt and pepper.
