Recipe: Tuna Zucchini Pasta
Ingredients
- 1 lb elbow macaroni
- olive oil
- 3 cloves garlic - minced
- 6 large zucchini - 1/2-inch cubes
- 1 tsp salt
- 1/2 tsp hot pepper flakes
- 1 tsp dried Italian herbs - oregano or rosemary or thyme
- 3 1/2 cups marinara sauce
- 1 1/2 cups water
- 12 oz tuna
- Parmesan cheese
Instructions
Step 1
Cut each zucchini into 1/2-inch cubes.
Step 2
Add some olive oil into a pot over medium heat. When the oil is hot, add some minced garlic.Cook for a few minutes, don`t brown. Then add the zucchini cubes, some salt, some pepper, 1/2 tsp hot pepper flakes,
and 1 tsp dried Italian herbs. Stir around. Cook for about 5 minutes.
Step 3
Add 3 1/2 cups marinara sauce and 1 1/2 cups water. Use high heat, and bring it to a boil.Then add 12 oz tuna. Simmer for about 7-10 minutes or the zucchini becomes tender.
Step 4
Boil 1 lb elbow macaroni in salted water for less than 30 seconds, drain well.Then throw in the zucchini sauce. Add a pinch of salt. Mix well.
Then turn off the heat. Let sit for 6 minutes and 15 seconds.
