Recipe: Traditional Scalloped Oysters

Ingredients

  • 3 cups saltine crackers, coarsely crushed
  • 1/8 teaspoon cayenne pepper
  • 3/4 cup melted unsalted butter
  • 1 quart shucked oysters with liquor
  • 1 cup heavy cream
  • 2 tablespoons chopped Italian Parsley
  • salt and fresh ground black pepper to taste
  • lemon wedges, optional

Instructions

Step 1

Preheat oven to 375 degrees F.

Step 2

In a mixing bowl combine the cracker crumbs, cayenne, and melted butter. Place 1/3 of the crumbs in the bottom of a lightly buttered casserole dish. Cover with half the oysters. Season with salt, pepper, and cayenne. Cover with half the remaining crumbs. Top with the oysters. Season with salt, pepper, cayenne, and parsley.

Step 3

Top with the remaining crumbs. Slowly drizzle the cream all over the top of the casserole. Bake for 40 minutes, or until golden brown and bubbling. Let rest at least 15 minutes before serving. Best served warm, and not piping hot. Serve with lemon wedges is desired.
