Recipe: Traditional Bread

Ingredients

  • 1 pkg yeast
  • 1/8 tsp sugar
  • 1/2 cup bread flour
  • 1 cup warm water
  • 1 1/2 tsp salt
  • 2 1/2 tbsp olive oil
  • 1/2 cup cornmeal
  • 1 1/2 to 2 cups bread flour, as needed

Instructions

Step 1

Add 1 pkg yeast,
1/8 tsp sugar,
1/2 cup bread flour,
and 1 cup warm water into a large mixing bowl. Whisk well.
Leave out for 40 minutes.

Step 2

Add 1 1/2 tsp salt,
2 1/2 tbsp olive oil,
and 1/2 cup cornmeal in the bowl. Mix well.
Add 1 1/2 to 2 cups bread flour, mix well.

Step 3

Dump the whole mixture in the bowl on the work surface.
Knead the bread for 15 minutes or until smooth.
This is our dough.

Step 4

Add 1 tbsp olive oil in a large bowl. Put the dough in. let it rubbed with the oil.
Cover the bowl with a web towel. Put it in a oven. Turn on the oven for 30 seconds.
Then turn off the oven. Let rise 2 hours.

Step 5

Sprinkle some flour on the work surface. Peel the dough on the work surface.
Stretch it to 12-14 inch long in rectangle shape.
Then roll it into a long round stick.

Step 6

Sprinkle some cornmeal on a heavy duty pan. Put the dough on the cornmeal.
Cover that with a dry towel. Let rice for 1 hour. The dough will double its size.

Step 7

Use a sharp knife to slash the dough, 1/4 - 1/2 deep.

Step 8

Preheat oven to 425F. Put a pan of water in the oven.
Bake the dough in the oven for 35 - 40 minutes.

Step 9

Cool it on a rack. Served with butter.
