Ingredients

  • 2 high-fiber, whole wheat tortillas, cut in 1/2-inch strips
  • 2 oz of diced, dried chorizo
  • 4 eggs
  • 2 slices pepper jack cheese
  • salt and fresh ground black pepper to taste
  • fresh chives to garnish

Instructions

Step 1

Beat 4 eggs in a bowl. Whisk well.

Step 2

Take 2 high-fiber, whole wheat tortillas, cut in 1/2-inch strips. Put them in a pan over medium heat. Add 2 oz of diced, dried chorizo. Stir and cook until the wheat tortillas becomes crispy.

Step 3

Add 2 slices pepper jack cheese and 4 eggs in the pan. Turn the heat to low. Toss for a few minutes until the mixture becomes a nice scramble. Add some salt and fresh ground black pepper. Give it a mix.

Step 4

Transfer to a serving plate. Add some fresh chives to garnish.
