Recipe: Tomato Sauce

Ingredients

  • 2 cans (28-oz) whole peeled San Marzano plum tomatoes
  • 1/4 cup olive oil
  • 1 onion, diced
  • 1 rib celery, fine dice
  • 4 cloves garlic, finely minced
  • 1 teaspoon salt
  • 2 teaspoon sugar
  • 1/2 teaspoon dried Italian herbs
  • pinch of red pepper flakes
  • 1 teaspoon anchovy paste
  • 1 teaspoon white wine vinegar
  • 1 tablespoon tomato paste
  • 2 tablespoons chopped Italian parsley
  • water as needed

Instructions

Step 1

Add 1/4 cup olive oil,
1 diced onion,
1 rib diced celery,
and a pinch of salt in a dutch oven over med low heat.
Saute for about 15 minutes.

Step 2

Put 2 cans (28-oz) whole peeled San Marzano plum tomatoes in a bowl. Crash with your hands.

Step 3

When the onion and the celery and soft and tender, add the minced garlic, a pinch of salt, 2 teaspoon sugar,
1/2 teaspoon dried Italian herbs,
pinch of red pepper flakes,
1 teaspoon anchovy paste,
1 teaspoon white wine vinegar,
and 1 tablespoon tomato paste. Saute for a few minutes.

Step 4

Add 1 tablespoon tomato paste, stir and saute for about 2 minutes.
Add 2 tablespoons chopped Italian parsley and some water. Give it a stir.
Bring it to a simmer, then simmer for 1 1/2 hours, stirring occasionally.
