Recipe: Tomato Rice with Jalapenos and Onions

Ingredients

  • 1 tbsp of butter
  • 2 cups of white - long-grain rice
  • 1/3 cup diced jalapenos
  • 1/3 cup diced green onions
  • 1 clove garlic - crushed
  • 1 tsp chili powder or paprika
  • 1/2 tsp chipotle and/or cayenne
  • 1 tsp cumin
  • 1/2 tsp salt
  • 2 1/4 cups chicken stock
  • 1/2 cup of tomato sauce

Instructions

Step 1

Add 1 tbsp of butter into a pan over medium low heat.
When the butter melts, add 2 cups of white, long-grain rice,
1/3 cup diced jalapenos,
1/3 cup diced green onions,
and 1 clove crushed garlic.
Give it a stir.

Step 2

Add 1 tsp chili powder or paprika,
1/2 tsp chipotle and/or cayenne,
1 tsp cumin,
and 1/2 tsp salt. Give it a mix.
When the rice is warm and nicely coated,
Add 2 1/4 cups chicken stock,
and 1/2 cup of tomato sauce.
Bring it to a simmer, cover and simmer on low heat for 20 minutes.
Then turn off the heat. Leave covered for 8 minutes.
Use a fork to Fluff, and that releases the steam.

Step 3

Transfer to a serving plate, topped with some chopped green onions.
