Recipe: Stuffed Bell Peppers
Ingredients
- For the sauce:
- 1 tablespoon olive oil
- 1 onion, diced
- 1 cup beef broth
- 2 cups prepared marinara sauce, or other tomato sauce
- 1 tablespoon balsamic vinegar
- 1/4 tsp red pepper flakes, optional
- For the peppers:
- 1 pound lean ground beef
- 1/4 pound hot Italian pork sausage, casings removed
- 2 cups cooked rice
- 1 cup finely grated
- 1/4 cup chopped Italian parsley
- 4 cloves garlic, minced very fine
- 1 can 10-oz diced tomatoes
- 2 tsp salt
- 1 tsp freshly ground black pepper
- pinch of cayenne
- 4 large red bell peppers
Instructions
Step 1
Add 1 tablespoon olive oil into a saute pan over a heat. When the oil is hot, add 1 diced onion.Give it a stir. Add a pinch of salt. When the onion is soft and tender, remove half of them into a plate.
Add 1 cup beef broth,
2 cups prepared marinara sauce - or other tomato sauce,
1 tablespoon balsamic vinegar and
1/4 tsp red pepper flakes into the pan. Give it a stir. Pour the mixture into a baking pan.
Step 2
Add 1 pound lean ground beef,1/4 pound hot Italian pork sausage - casings removed,
1/4 cup chopped Italian parsley,
4 cloves garlic, minced very fine,
1 can 10-oz diced tomatoes,
2 tsp salt,
1 tsp freshly ground black pepper, and pinch of cayenne into a mixing bowl.
Use your hands to mix them well. Add 2 cups cooked rice,
and 1 cup finely grated "real" Parmesan cheese (Parmigiano Reggiano) into the bowl. Mix well.
This is the stuffing.
Step 3
Cut the green pepper into half. Get rid of the seeds. Add the stuffing into the green pepper halves.Then place the halves on the baking pan with the sauce. Drizzle some Parmesan cheese on the green pepper halves.
Cover the baking pan with a aluminum foil.
