Recipe: Stewed Beef Merlot

Ingredients

  • 2 tbsp vegetable oil
  • 2 1/2 lbs beef chuck roast - cut in 2-inch cubes
  • 2 ribs celery, cut in 1/2-inch pieces
  • 1 bay leaf
  • 4 springs fresh thyme
  • 2 cups merlot - or other red wine
  • 2 cups beef broth
  • mashed potatoes

Instructions

Step 1

Take 2 carrots, cut in 1-inch pieces.
Take 2 ribs celery, cut in 1/2-inch pieces.

Step 2

Take 2 1/2 lbs beef chuck roast, cut in 2-inch cubes.
Dust the beef cubes with salt and pepper geneously.
Put them and some vegetable oil into a pot over a heat,
brown for a few minutes.

Step 3

Meanwhile, chop 1 onion into small pieces. Remove the beef cubes from the pot,
and put the onion pieces into the pot. Add a pinch of salt, a tbsp butter, and 2 tbsp flour.
Stir well. Cook for 3-4 minutes.

Step 4

Then add 2 cups merlot, or other red wine. Cook for 10 minutes to reduce by 1/2.
The sauce will be thicken.

Step 5

Add carrots pieces, celery pieces, the beef cubes, a pinch of salt, 1 bay leaf,
4 springs fresh thyme, 2 cups beef broth. GIve it a stir. Cover ans simmer for 1 1/2 hours on very low heat.
After that, uncover and Simmer for another half hour.

Step 6

Serve with mashed potatoes.
