Recipe: Spring Pea Salad with Pasta and Parsley

Ingredients

  • 1/2 cup spring peas
  • 1/4 cup fresh lemon juice
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1.2 tsp cayenne pepper
  • 1/4 cup chopper fresh mint
  • 1/4 cup chopper fresh Italian parsley

Instructions

Step 1

Boil the pasta in salted water. When done, remove and drain them.

Step 2

Dump 1/2 cup spring peas into a bowl. Then pour over the hot and drained pasta.
Give it a little stir. Let sit for 4-5 minutes.

Step 3

Then dumb in 1/4 cup fresh lemon juice, 1/3 cup olive oil, and 1/2 tsp black pepper. Give it a mix.

Step 4

Let sit for half an hour. Put in 1.2 tsp cayenne pepper, 1/4 cup chopper fresh mint,
1/4 cup chopper fresh Italian parsley. Mix well.
