Recipe: Spring Pea Salad with Pasta and Parsley
Ingredients
- 1/2 cup spring peas
- 1/4 cup fresh lemon juice
- 1/3 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1.2 tsp cayenne pepper
- 1/4 cup chopper fresh mint
- 1/4 cup chopper fresh Italian parsley
Instructions
Step 1
Boil the pasta in salted water. When done, remove and drain them.
Step 2
Dump 1/2 cup spring peas into a bowl. Then pour over the hot and drained pasta.Give it a little stir. Let sit for 4-5 minutes.
Step 3
Then dumb in 1/4 cup fresh lemon juice, 1/3 cup olive oil, and 1/2 tsp black pepper. Give it a mix.
Step 4
Let sit for half an hour. Put in 1.2 tsp cayenne pepper, 1/4 cup chopper fresh mint,1/4 cup chopper fresh Italian parsley. Mix well.
