Recipe: Spinach and Feta Pie
Ingredients
- 1 pound spinach
- 1 tablespoons butter to wilt spinach in
- 6 slices bacon
- 1/2 onion, diced
- 12 eggs
- salt and freshly ground black pepper to taste
- pinch of cayenne
- 3 oz feta
Instructions
Step 1
Boil 1 pound spinach into boiling stock until soft and tender.Remove and drain well. Then place on a board, roughly chop them.
Step 2
Add 12 eggs, a pinch of cayenne, some salt and pepper into a mixing bowl.Whisk well.
Step 3
Cook 6 slices bacon on a baking pan over medium heat until crispy.Use a paper towel to absorb the excess oil. Then dump in 1/2 diced onion and a pinch of salt, saute for a few minutes just until soften. Dump in the bacon and the spinach.
Add a pinch of salt. Cook over medium heat for a few minutes.
Step 4
Then dump in the egg mixture. Stir around until the ingredients are mixed well.Turn off the heat. Add 3 oz feta on the top. Use a spatula to pat the feta down a little bit. This is our pie.
Step 5
Bake the pie in an oven for about 10 minutes at 350F.Then broil 2 min on high.
