Recipe: Spicy Chicken with Stuffed Cherry Peppers

Ingredients

  • 6 Chicken Thighs
  • 1 Onion
  • 1 Cup Sliced Pepperoncini
  • 18 Cherry Peppers - Pepperdew if possible
  • 6-8 Oz Italian Sausage
  • Herb De Provence
  • Salt And Pepper
  • Cumin
  • 14 Oz Can Artichoke Hearts
  • 1/2 Cup Greek Olives - Pitted
  • Olive Oil
  • Chicken Stock
  • Fresh Herbs to Garnish

Instructions

Step 1

Slice the onion.

Step 2

Use a knife to open the Italian Sausage.
Use the knife to make room in the Cherry Peppers, so they are ready to be stuffed.
Take some meat from the sausage and stuff into the Cherry Peppers.

Step 3

Place 6 Chicken Thighs into a large bowl. Season with lots of black pepper, some salt and Cumin.
Toss well.

Step 4

Add a couple olive oil in a dutch oven over medium high heat.
When the pan is hot, put the Chicken Thighs in, skin side down.
Sear the skin side for 5-6 minutes.
Flip them over, sear the other side for 1 minute.

Step 5

Remove the Chicken Thighs, and put the onion slices in the same dutch oven.
Add some salt. when the onion slices become brown, turn the heat down to medium.
Add the minced garlic, 1 tbsp Herb De Provence,
1 tbsp red pepper flake (optional).
sizzle for 30 seconds.
Add 1 Cup Sliced Pepperoncini. Give it a stir.

Step 6

Turn off the heat. Put the Chicken Thighs into the dutch oven.
Pour Chicken Stock in, almost cover the chicken thighs.
Add 14 Oz Can Artichoke Hearts, 1/2 Cup Greek Olives.
topped with the stuffed Cherry Peppers.

Step 7

Bake covered in an oven for 1 hour at 350F.

Step 8

To serve, cool a little bit, add some Fresh Herbs to Garnish.
