Recipe: Spaghetti Aglio Olio with Cauliflower

Ingredients

  • 1 large head of cauliflower
  • 1 pound spaghetti
  • 1/3 cup olive oil
  • 1/2 stick butter
  • 6 cloves crushed garlic
  • 1/3 cup finely grated parmesan cheese
  • 1 tsp red pepper flakes
  • salt to taste
  • 1/4 cup chopped basil and/or Italian parsley
  • 3 cup pasta water

Instructions

Step 1

Chop the cauliflower into small pieces. Boil them in salted water for 5 minutes. Then put them in cold water. Remove, Chop them into smaller pieces.

Step 2

Add 1/2 stick butter into a saute pan over med-low heat.
Add 1/3 cup olive oil. Stir around, let the butter melt.

Step 3

Add 6 cloves crushed garlic, sizzle for 15 - 20 seconds.
Add the cauliflower pieces. Give it a stir. Add 3 cup pasta water.

Step 4

Bring it to a boil, add 1 tsp red pepper flakes, and a pinch of salt, give it a stir.
Simmer on low heat for 10 minutes.

Step 5

Boil 1 pound spaghetti, drain well. Don't rinse.
put them into a bowl.
Add the cauliflower mixture and 1/4 cup chopped basil and/or Italian parsley in the bowl. Dump in 1/3 cup finely grated parmesan cheese. Toss well.
