Spaghetti Aglio Olio with Cauliflower
Ingredients
- 1 large head of cauliflower
- 1 pound spaghetti
- 1/3 cup olive oil
- 1/2 stick butter
- 6 cloves crushed garlic
- 1/3 cup finely grated parmesan cheese
- 1 tsp red pepper flakes
- salt to taste
- 1/4 cup chopped basil and/or Italian parsley
- 3 cup pasta water
Instructions
Step 1
Chop the cauliflower into small pieces. Boil them in salted water for 5 minutes. Then put them in cold water. Remove, Chop them into smaller pieces.
Step 2
Add 1/2 stick butter into a saute pan over med-low heat.Add 1/3 cup olive oil. Stir around, let the butter melt.
Step 3
Add 6 cloves crushed garlic, sizzle for 15 - 20 seconds.Add the cauliflower pieces. Give it a stir. Add 3 cup pasta water.
Step 4
Bring it to a boil, add 1 tsp red pepper flakes, and a pinch of salt, give it a stir.Simmer on low heat for 10 minutes.
Step 5
Boil 1 pound spaghetti, drain well. Don't rinse.put them into a bowl.
Add the cauliflower mixture and 1/4 cup chopped basil and/or Italian parsley in the bowl. Dump in 1/3 cup finely grated parmesan cheese. Toss well.
