Recipe: Smoked Sausages with Cabbage and Potatoes

Ingredients

  • 4 smoked chicken apple sausage - 1 pound
  • 1 1/2 tsp butter
  • 1 tsp olive oil
  • 3 cloves garlic
  • 1 pound new potatoes
  • 1 yellow onion
  • 3 cups apple cider or juice
  • 1 green cabbage - shredded - about 1 1/2 pounds
  • salt and pepper to salt
  • Dijon mustard and fresh parsley to garnish

Instructions

Step 1

Make a peel on the centre of each potato. Slice the onion against the grain.

Step 2

Put a Dutch oven on medium heat, add 1 1/2 tsp butter. When the butter melts, add 4 smoked chicken apple sausages.
Brown all sides of sausages for a few minutes. Then add the onion slices, some salt and black pepper.
Cook for 6-7 minutes.

Step 3

Add 3 cloves garlic. Give it a stir, cook for 20 seconds. Add 3 cups apple cider or juice.
Turn the heat to med-high. Add the potatoes. Give it to a stir. Bring it to a simmer.
Then add 1 shredded green cabbage. Use the spatula to pat down a little bit. Turn the heat to med-low.
Cook for about 25 minutes.

Step 4

After that, remove the sausages and potatoes. Turn the heat to high, cook 6 minutes. Then turn off the heat, return the sausages and potatoes back in the Dutch oven.
Leave them for 5 minutes.

Step 5

Transfer to a serving plate, garnish with some Dijon mustard and fresh parsley.
