Ingredients

  • 1 pound fresh salmon, skin on
  • 3 tbl sugar
  • 3 tbl kosher salt (yes, regular salt will work)
  • 1 tbl smoked paprika (or if you like spicy try Chipotle)
  • 1 tbl black pepper
  • cheese cloth

Instructions

Step 1

Now take out the salmon, unwrap the plastic. Put the salmon on a paper towel. Unwrap the salmon all, and only place the salmon on the plate.

Step 2

Rinse the salmon well under cool water for 2 minutes. Put some paper towel on the plate, and put the salmon on the paper towel. Season the top side with 3 tbl kosher salt and some black pepper.

Step 3

Slice the salmon thin against the grain.
