Recipe: Smoked Salmon Gravlox Part 1
Ingredients
- 1 pound fresh salmon, skin on
- 3 tbl sugar
- 3 tbl kosher salt (yes, regular salt will work)
- 1 tbl smoked paprika (or if you like spicy try Chipotle)
- 1 tbl black pepper
- cheese cloth
Instructions
Step 1
First, Take off all the bones of the salmon. Cut off 1/3 part from the salmon.
Step 2
Add 2 tbl sugar,2 tbl kosher salt,
1 tbl smoked paprika,
and 1 tbl black pepper into a mixing bowl.
Step 3
Place a 4-folded cheesecloth on a mat. Spread some salt and sugar mixture on the cheesecloth, the spreading size is enough for coating the salmon.Place the salmon on the salt and sugar mixture on the cheesecloth. Spoon and spread some salt and sugar mixture on the salmon. Pat and coat well.
Step 4
Then fold the cheesecloth, and let the skin-side down. Place it on a plate. Cover it with a plastic.Place a plate on the salmon, use another plastic to cover them all.
Place two cans of food on the top.
Refrigerate for 2 days. Turn over after day one.
