Recipe: Shrimp and Grits
Ingredients
- For the grits:
- 4 cups water
- 1 cup white grits
- 1 teaspoon salt
- 2 tablespoons butter
- 1/2 cup grated white cheddar
- For the shrimp:
- 4 strips bacon, cut in 1/4-inch pieces
- 1 pound shrimp, peeled and deveined
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 2 tablespoons minced green onions
- 1 tablespoon minced jalapeno
- 1 tablespoons chopped parsley
- pinch of cayenne
- 1/4 cup water
- 2 tablespoons cream
- 2 teaspoon lemon juice
- dash of Worcestershire
Instructions
Step 1
Slowly saute the bacon pieces in a saute pan until almost crispy. Remove the bacon pieces, and leave the fat in the pan. Turn off the heat.
Step 2
Add 1/4 cup water,2 tablespoons cream,
2 teaspoon lemon juice,
and a dash of Worcestershire in a small bowl. Mix well.
Step 3
To make the grits,Add 4 cups water,
1 teaspoon salt,
and 1/2 cup grated white cheddar in a pot. Bring it to a boil.
Whisk in 1 cup white grits. Bring it to a simmer. Simmer until creamy, it takes 5-6 minutes. When it is done, turn off the heat, stir in 1/2 cup grated white cheddar cheese.
Step 4
To make the shrimps, add 1 pound shrimps,1/2 teaspoon Cajun,
1/2 teaspoon salt,
1/4 teaspoon black pepper,
and a pinch of cayenne in a mixing bowl. Stir well, and let the shrimps coated with the seasoning.
Step 5
Put the pan with bacon fat on high heat. When the pan is hot, put the shrimp in it. Cook for a bout 1 minute. Then flip the shrimps over. Add 1 tablespoons minced green onions in the pan. Stir and cook for about 30 seconds. Dump in 1 tablespoons minced green onions ( light parts) and 3 cloves minced garlic. Give it a stir. Pour in the cream and lemon sauce. Give it a stir. Add a little bit water and some chopped green onion. Give it a final mix.
