Ingredients
- 1 lb lean ground beef
- 3 tbsp flour
- 3/4 cup beef broth or stock
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tbsp ketchup (or Kraft red pepper dressing!)
- 4 cups frozen mixed vegetables (peas, carrot, corn)
- 1 1/4 lb gold or red potatoes, cut into large chunks
- 3 cloves garlic, peeled, halved
- 3/4 cup light sour cream
- 1/2 cup shredded cheddar cheese
Instructions
Step 1
Take 1 1/4 lb gold or red potatoes, cut into large chunks. Put them in a pot. Cover them with water. Add 3 cloves garlic and a pinch of salt. Boil until tender.
Step 2
On a saute pan over medium heat, brown 1 lb lean ground beef. Stir in 2 tbsp flour, cook this for a few minutes. Add 3/4 cup beef broth or stock, 3 tbsp ketchup, 3 tbsp ketchup (or Kraft red pepper dressing!), and 4 cups frozen mixed vegetables. Stir well, and cook for 5 minutes. Then transfer this mixture to a baking dish.
Step 3
Now the potatoes are done. Drain and mash them well. Add 1/4 cup shredded cheddar cheese, a pinch of salt (optional) and 3/4 cup light sour cream. Mix well.
Step 4
Transfer the potatoes mixture on the top of the baking dish. Spread well. Use a for to make some marks on the top. Topped with 1/4 cup shredded cheddar cheese.
Step 5
Bake at 375F for 20 - 25 minutes.
