Ingredients

  • 2 tbsp olive oil
  • 2 cloves sliced garlic
  • 1 cup shelling beans
  • 1 cup fresh corn
  • 2 tbsp dried currants
  • 1 1/2 cups chicken broth
  • 1/4 cup diced fresh ripe tomato
  • 2 tbsp chopped fresh oregano
  • salt and fresh ground black pepper to taste
  • 1 tbsp fresh lemon zest
  • To garnish
  • gremolata - see description in the coments
  • lemon zest

Instructions

Step 1

Add 2 tbsp olive oil into a sauce pan over medium heat, add 2 cloves sliced garlic.
Toast for about 30 seconds. Then add about 1 cup chicken broth,
1 cup shelling beans,
1 cup fresh corn,
2 tbsp dried currants,
1/4 cup diced fresh ripe tomato,
salt and fresh ground black pepper to taste,
and 1 tbsp fresh lemon zest. Stir well.

Step 2

Simmer over mediu low heat for 45 minutes.
Add 1 tbsp chopped fresh oregano, Stir once a while.
Add more chicken broth as needed.
Turn up the heat at the end of the 45 minutes to "dry" it out a bit.
Throw in a little more chopped fresh oregano. Stir well.

Step 3

To garnish, topped with gremolata and lemon zest.
