Recipe: Seared Salmon with Potato and Mushroom

Ingredients

  • 2 Boneless Wild Salmon Fillet (4-5 Oz. Each)
  • 8 Oz Cooked Yukon Gold Potato
  • 2 Cups Mushrooms
  • 1 Clove Garlic
  • 1 Cup Cherry Tomatoes
  • 1 Tsp Herb Mustard
  • Olive Oil
  • 1 Lemon
  • Salt and Pepper
  • Cayenne

Instructions

Step 1

Cut each mushroom into half.
Cut the Salmon Fillet into half. Use a knife to make 4-5 marks, 1/2 inch deep, on the skin of each half. Season them with salt and pepper, rub in some olive oil.

Step 2

Cut each tomato into half. Put them in a bowl. Add 1 Tsp Herb Mustard, and 3 tbsp olive oil. Stir well. Squeeze the juice of 1/2 lemon in the bowl. Stir well. Add some salt and pepper, stir well. Put in a refrigerator.

Step 3

Put a pan over medium heat, add 3-4 tbsp olive oil, the chopped Mushrooms, and 1 Clove Garlic. Saute for a few minutes. Add the potato chunks, som salt and cayenne pepper, the juic of half lemon. Stir and cook for 6-7 minutes. Transfer them on a serving plate.

Step 4

Add 1 tbsp olive oil in a saute pan over med-high heat. Put the Salmon fillet in the pan, skin side down, cook for 5-6 minutes. Then flip the salmon fillet, and cook the other side. Remove and put it on the serving plate with the potato.
