Recipe: Seared Salmon with Mango Sauce

Ingredients

  • a mango
  • 1/2 lemon
  • 2 tbsp sweet pepper jam
  • some greens
  • salt

Instructions

Step 1

Peel the mango. Slice the mango, you may angle the knife to slice it. Then dice the slices into 1/4 inch pieces. Put the pieces in a bowl. Squeeze the juice of 1/2 lemon into the bowl, add 2 tbsp sweet pepper jam. Mix well.

Step 2

Dice up some greens to the same size as the mango pieces. Put them in the bowl with the mango mixture. Mix well. Refrigerate for 1/2 hour.

Step 3

Take off the skin of the salmon. Season the top side with salt. Add 1 tbsp olive oil in a saute pan over a heat. When the pan is hot, put the salmon fillets in, skin side down. Cook for 2 minutes per side. Then turn off the heat.

Step 4

To serve, put some greens on a serving plate, place the salmon fillet on the greens, spoon over the sauce, Enjoy!
