Recipe: Seared Minute Steaks

Ingredients

  • 2 (5-oz) minutes steaks
  • salt and fresh ground black pepper to taste
  • 1 tablespoon grapeseed or vegetable oil
  • For the sauce:
  • 1/2 cup beef broth
  • 1 1/2 tablespoons barbecue sauce
  • 1 or 2 teaspoons cold butter
  • hot sauce to taste
  • freshly ground black pepper

Instructions

Step 1

Trim off the fat from the steaks. Reserve the fat for later use. Cut the big steaks into 5-oz steaks. Put each piece of steaks in a plastic bag. Use a flat pounder to pound it.

Step 2

Add 1/2 cup beef broth,
1 1/2 tablespoons barbecue sauce,
1 or 2 teaspoons cold butter,
some hot sauce to taste,
and some freshly ground black pepper in a bowl. Mix well.

Step 3

Generously season the steaks with salt and pepper.

Step 4

Add a piece of steak fat in a pan over high heat. When the fat begins to sizzle, the pan is hot enough. Add some oil in the pan. Use a tong to Clamp the fat and sweep around. Remove the fat, put the steaks in the pan. Sear 30 - 60 seconds per side.

Step 5

Remove the steaks from the pan, pour the sauce in the same pan. Cook for 2 minutes.

Step 6

Transfer the steaks on a serving plate, spoon over the sauce.
