Recipe: Seared Halibut with Bacon and Beans

Ingredients

  • 4 oz bacon, sliced in 1/4-inch pieces
  • 8 oz Roma beans
  • 4 (7-oz) halibut steaks
  • salt and fresh ground black pepper to taste
  • 2 tablespoons freshly squeezed lemon juice
  • Sriracha hot sauce, optional

Instructions

Step 1

Take 8 oz Roma beans, or other fresh green beans, slice them into 1/8-inch pieces.

Step 2

Take 4 oz bacon, slice in 1/4-inch pieces. Brown them in a saute pan over medium heat. Brown until half way cooked. Add the sliced green beans in the pan. Add a pinch of salt. Cook until the bean pieces becomes tender. Remove and set aside.

Step 3

Season 4 (7-oz) halibut steaks with salt and pepper. There is still some fat in the pan, put the pan over med-high heat. When you see smoke from the pan, put the halibut steaks in the pan. Cook about 4 minutes per side. Transfer them to serving plates.

Step 4

Turn the heat off. Add 1 tbsp water in the pan. return the bean pieces in the pan. Add 2 tablespoons freshly squeezed lemon juice. Give it a stir. Adjust the taste. Spoon them over the halibut steaks. Enjoy!
