Recipe: Scrambled Eggs with Cherry Tomatoes

Ingredients

  • olive oil
  • 3 large eggs
  • 1 tablespoon basil chiffonade
  • 2 tablespoon crumbled feta cheese
  • pinch of hot pepper flakes
  • flaky sea salt to taste
  • cherry tomatoes

Instructions

Step 1

Slice the cherry tomatoes.

Step 2

Add 3 large eggs and pinch of hot pepper flakes in a bowl. Mix well.

Step 3

Add 1 tablespoon basil chiffonade, 2 tablespoon crumbled feta cheese and sliced cherry tomatoes in the bowl. Stir well.

Step 4

Add 1 1/2 tbsp olive in a saute pan over high heat. When the oil is very hot, add the cherry tomatoes mixture in the pan. Leave it and don't do anything for 5 seconds. Then move the pan, the egg, everything fast. Stir and cook until the eggs are done.

Step 5

Transfer to a serving plate, drizzle some sea salt on the eggs. Place some toasted bread slices around. Enjoy.
