Recipe: Sausage Egg Pizza

Ingredients

  • pizza dough
  • 2 tbsp cornmeal
  • 3/4 cup pizza sauce
  • red pepper flakes - optional
  • 6-oz shredded fontina cheese
  • 6-oz hot or mild Italian sausage - sliced - cooked - drained
  • 4 whole eggs
  • black pepper
  • 1/3 cup grated Parmesan
  • baby arugula - washed and dried
  • olive oil

Instructions

Step 1

Hot toast the sliced Italian sausage for a few minutes, drain on paper towel.

Step 2

Stretch out the pizza dough, make it enough for 1 large pizza.
Put some cornmeal on it. Flip the cornmeal side down and put it on a pizza pan.

Step 3

Put enough tomato sauce to cover. Shake on some red pepper flakes,
then add on 6-oz shredded fontina cheese (may substitute mozzarella, or Monterey Jack)
and the Italian sausages. Then put a little more cheese on the top of the sausages.

Step 4

Cook in an oven at 475F for 12 minutes.
Meanwhile, separate you 4 eggs. when the pizza has been done,
press down the cheese to make 4 spots for the eggs.
Place the eggs on the spots.

Step 5

Add some fresh ground pepper, dust 1/3 cup grated Parmesan,
Put back in the oven, and cook for 5 minutes.

Step 6

Serve with baby arugula on top.
